Before the food can spoil in the walk-in cooler it is preserved long-term in glass jars. Traditionally large amounts of food waste occurs at the harvest stage in many developing nations. This is due to the lac of reliable electricity in developing nations. Refrigeration is not possible with intermittent electricity. Refrigeration needs to be constant and below 40 degrees Fahrenheit to prevent food from spoiling.
